INGREDIENTS:
2 teaspoons Sesame oil
1 teaspoon chopped garlic
1 teaspoon chopped ginger
1/2 pound asparagus, trimmed and cut into 2 inch pieces
1/2 cup sliced mushrooms
1/2 pound shrimp, peeled and deveined
freshly ground black pepper, to taste
2 tablespoons light soy sauce
(OPTIONAL: kelp noodles or brown rice)
Cooking Instructions
1. Heat the sesame oil in a skillet or wok over medium-high heat.
2. Add the garlic and ginger and stir quickly for 30 seconds.
3. Increase the heat to high. Add the asparagus, then the mushrooms, then the shrimp, stirring as you add each ingredient.
4. Season with pepper.
5. Add the soy sauce and cook until the shrimp are fully cooked, about 2 minutes.
Serve with Kelp noodles or Brown rice!

I used frozen cooked shrimp, garlic powder, and ground ginger because they were in the house (OK I was too lazy to go to the store) and this was a totally yummy dinner!!! Super healthy change from our tilapia and veggies! Thanks.
