INGREDIENTS:
-2 tbsp sesame oil
-1/2 cup freshly squeezed lemon juice
-2 garlic cloves, minced
-1 cup diced tomatoes
-1 cup diced cucumbers
-3 tbsp sesame seeds
-1 cup finely diced red onion
-1 cup bell peppers, mixed colors, chopped
-1 lb 99% lean ground turkey breast
-1/4 cup Italian parsley, chopped
-1/4 cup cilantro, chopped
-pepper to taste
DIRECTIONS:
-Over stove top, saute turkey until fully cooked.
-While turkey is cooking, prepare all vegetables (onion, cucumbers, tomatoes, and bell peppers) by chopping and dicing and place in large bowl. Add parsley, cilantro, pepper, garlic, lemon and sesame oil and toss generously.
-Add ground turkey to the bowl and continue to toss generously. Once fully tossed and mixed sprinkle sesame seeds over top and gently toss.
