Can of clams (50 oz or so), cooked
2 cups baby shrimp, cooked
1/3 cup olive oil
1 tsp olive oil
1 tbsp garlic, chopped
12 medium tomatoes, peeled and seeded
1 red pepper roasted
1 cucumber , peeled and seeded
1 large onion, diced
1 cup vegetable tomato juice
salt and pepper to taste
fresh cilantro for garnish

-In a food processor, place the olive oil and garlic and puree.
-Remove to large bowl.
-Add the tomatoes, cucumber, red pepper, add onion into the food processor. Process until pureed. Add this mixture to the oil and harlic bowl. Add the reserved clam juice and the tomato juice. Add the chopped clams and shrimp. Add salt and pepper to taste.
-Cover and chill for 2 hours or longer. Serve and garnish with fresh cilantro.
