Ingredients:
1 cucumber, chopped
½ cup bell pepper, diced
½ cup red onion, diced
1 can  Salmon drained (Coscto has an awesome canned salmon!) –MAKE SURE THERE ARE NO BONES!
1/3 cup plain fat-free cottage cheese
1/4 cup olive oil
1 tablespoon lemon juice
1 teaspoon dried dill weed
2 tablespoons fresh parsley
2 Ezekiel Tortillas
In mixing bowl, combine cucumber, bell pepper, onion and salmon. In separate bowl, cottage cheese, oil, lemon juice, dill weed, and parsley. Stir both mixes together salmon. Portion onto Ezekiel tortillas and enjoy!
