Ingredients:
1 teaspoon peanut oil
2 salmon fillets
freshly ground black pepper
1 orange, peeled and cut into sections
juice of 1/2 lemon
1 teaspoon chopped, fresh tarragon
Directions:
1. Preheat the broiler.
2. Place the orange sections, lemon juice and tarragon in a mixer and gently mix until pureed.
3. Brush the fillets with oil and season generously with pepper. Place the seasoned fillets on a non-stick baking sheet.
4. Broil the fillets for 3 to 4 minutes on each side, turning only once, until browned on each side.
5. Place the fillets on warmed plates, top with citrus Tarragon and serve!
