INGREDIENTS:
1/2 c. black beans
1/2 c. kidney beans
1/2 c. garbanzo beans
4 cloves fresh garlic, minced
2 oz almond mozzarella cheese, cubed
1/2 yellow bell pepper, diced
1/2 red bell pepper, diced
1/2 c. celery, diced
1/2 c. jicima, diced
1/2 c. artichoke hearts, diced
2 tbsp extra virgin olive oil
pepper, to taste
(optional: 1/2 c. quinoa or brown rice)
DIRECTIONS:
-Simply chop, dice or mince all ingredients and add them to big bowl.
-Toss lightly with EVOO and pepper.
-If you are using a whole grain such as brown rice or quinoa, lightly fold in grain.
