Ingredients:
2 Ezekiel tortilla
1/2 cup tomato sauce, divided
2/3 cup canned pure pumpkin
1/3 cup chopped onion
1/4 cup shredded fat-free cheddar cheese
3 oz chicken, cooked and shredded
2 tbsp tabasco sauce
black pepper (to taste)
1/4 cup chopped scallions
OPTIONAL: fat-free sour cream

Directions:
Preheat oven to 400 degrees.

Bring a pan sprayed with nonstick spray to medium heat on the stove. Add onion and Scallions (leaving a tablespoon or so out for finished product), stirring occasionally, cook until it begins to brown, about 2 minutes. Transfer to a medium bowl.

Add pumpkin, tomato sauce, pepper and tobasco to the bowl. Mix well and Set aside.

Spray a small baking dish with nonstick spray and set aside. Warm tortillas slightly in the microwave.

Lay tortillas flat on a clean, dry surface. Spread 2 tbsp. tomato sauce onto each one. Place shredded chicken breast over sauce and distribute the pumpkin mixture on top of each. Gently roll each tortilla and place downward on cookie sheet (seam sides down). Cover with remaining tomato mixture and sprinkle non fat cheddar cheese over the top. Bake in the oven for about 8 minutes, entil cheese is melted. Turn oven onto broil and broil until cheese starts to brown. Carefully remove and top off with non fat sour cream (if you wish to use it) and extra raw scallions (that were set aside) and Enjoy!
