Coconut Biscotti Protein balls
The holidays make me crave chocolate. Rather than giving into these cravings, I like to spend a little bit of time to have craving crushers handy so I can satisfy my sweet tooth without giving into the unnecessary fat, sugars and calories. There are SO many ways to satisfy these cravings that can come on strong without leaving us with that guilty feeling. It is the time of year to indulge and enjoy but in a healthy and smart way! This week, I was craving something with chocolate, peanut butter and coconut, basically an Almond Joy candy bar would have done the trick. Rather than giving into this craving, I decided to come up my own creation that would satisfy this craving and crush my sweet tooth but in a not so naughty way! These protein filled Coconut Biscotti Protein Balls sure did the trick! They are completely healthy and a great blend of carbs, protein and fats, making for a great snack to energize you and get you through these long busy days preparing for the holidays.
You must try these Coconut Biscotti Protein Chocolate Balls. They only take literally 5 minutes, of prep time, and will leave you satiated! With only 180 calories, 12 grams of energy rich good fat, 9 grams of protein and 5.5 grams of fiber, these are an excellent treat to have on hand! I hope you enjoy them as much as I do!
Gina’s Coconut Biscotti Protein Balls
1 1/2 cups oatmeal, uncooked
1/2 cup peanut butter (or any other nut butter)
2 scoops Devotion Nutrition Brownie Batter Protein (or Angel Food Cake)
1/4 cup unsweetened shredded coconut
1 Peanut Butter Crunch Flex Flavors
2 Coconut Biscotti Flex Flavors
1/2 cup ground flax meal
3/4-1 cup liquid (pasteurized egg whites, almond or coconut milk or water liquid you wish)
Pour flax meal onto a plate and set aside. Mix all ingredients together except almond milk and flax meal. Mixture should be slightly sticky yet still crumbly. Use judgement as far as how much liquid you add to mixture, adding 1/4 cup at a time until you get the necessary consistency, sticky and holds shape but not too runny. Spoon into balls and roll onto plate of flax meal to coat entire ball. Place on non stick cooking sheet and place in freezer for 10-15 minutes then transfer to refrigerator until ready to enjoy. If you prefer them more “fudge like”, leave them in the freezer and set them out 10-15 minutes before you want to indulge.

*G-Tip Tip: I prefer to keep them in the freezer and eat them more like fudge because one ball takes longer to eat, making me feel satisfied. When they come right out of the refrigerator, they are easier to eat and I am often tempted to eat more than one.
