Ingredients:
One 10-oz. package frozen chopped spinach, defrosted and thoroughly patted dry
1/2 cup finely chopped onion
1/3 cup Oatmeal or Grapenuts
1/4 cup egg whites
3 tbsp. fat-free cream cheese, room temperature
1 tsp tobasco
1 tsp. minced garlic
1 tsp. Italian seasoning
1/8 tsp. black pepper
1/4 c. Flaxseed

Directions:
Preheat oven to 350 degrees.

In a large bowl, combine all ingredients except for the ground oatmeal (or grapenuts) and Flaxseed and stir until completely mixed.

In a food processor or blender, grind oatmeal or grapenuts to a flour like or breadcrumb like consistency. Add crumbs to the large bowl and mix until integrated with other ingredients.

Prepare a baking sheet by lightly spraying it with nonstick spray. Scoop out about 1 tbsp. of the mixture, form it into a ball with your hands, rool it through the flaxseeds so that the entire ball is covered and place it on the baking sheet. Repeat with the rest of the mixture.

Bake in the oven for about 17-20 minutes. Follow up by placing oven on broil so balls can get slightly crisp. Be sure to rotate balls so can broil on all sides.

Allow to cool slightly, and then have a ball (or several)!
