Pineapples are one of my favorite tropical fruits and apparently are second to bananas as America’s favorite tropical fruit! I am always looking for ways to change up my everyday grab and go protein pancake or loaf so thought I would pick up a pineapple and come up with a fun and delicious creation! As a busy working mom, being able to quickly grab my meals to go is important and allows me to maintain my fitness while running a very tight schedule! At least two out of six of my meals are in the form of a shake or a pre made pancake, waffle or loaf. Being able to mix my macronutrients into one grab and go simple meal has been helpful in allowing me to maintain my healthy lifestyle while juggling my 2 year old and newborn! Getting creative, just like with anything, is key to keeping you on track and excited! I was in the mood for something a bit sweeter so picked up a pineapple and came up with this delicious grab and go alternative to my everyday protein pancake. 🙂 Once serving is a perfect “snack” or in between meal, that has just over 200 calories, 8 grams of good monounsaturated fat, only 10 grams of digestible carbs, 18 grams of protein and 6 grams of fiber!! This is the perfect in between meal to keep you going and give you the added boost of higher glycemic carbs to get through your busy days!! Give this one a try and let me know what you think!!

Pineapple Banana Cake
Ingredients:
1 scoop Angel Food Devotion Protein Powder
1/4 cup banana puree
2 banana Devotion FLEX FLAVORS
2 egg whites
¼ cup diced pineapple
¼ cup almond meal
2 tbsp coconut flour
¼ cup almond meal
2 tbsp unsweetened almond milk
1/2 tsp baking powder
½ tsp sea salt
Mix well and bake at 350 for 30-35 minutes, until fully cooked.
