Peanut Butter Oatmeal Muffins
Ingredients (use vegan versions):
1 cup oat flour
1.5 teaspoon baking powder
1 tsp baking soda
1 tsp cinnamon
1 cup rolled oats
1/2 cup non fat cottage cheese
1/4 c. peanut butter
2 egg whites
1/4 cup sugar free maple syrup
1/4 cup apple sauce
1/4 cup olive oil
1 teaspoon of vanilla
Directions:
In a large bowl, Mix wet and dry together
Spoon into greased muffin tins.
Bake at 350 for 25 – 30 minutes or browned on top. They are very moist muffins. Let them cool before you take them out of the tin.
Spoon into prepared muffin tins. Bake at 400 degrees F for 20 to 25 minutes. Makes 12 muffins.
Hi Gina- I am making these tonight in the small muffin pan. I made 24 pb oat muffins and was wondering how many for a serving? The kitchen smells so yummy!
Hi Teri! So glad you had a chance to make these, they are delicious! with 1 cup oats and 1 cup oat flour–(total 2 cups) a serving size is about 4 if you are going for about 40 g of carbs per serving and 8 if you are going more for 20g/serving so with your 24 muffins…
