3/4 cup non fat milk
1/2 cup orange crystal light
2 tbsp canola or flax oil
3.5 oz strained apricots
3 large egg whites
1 scoop vanilla protein powder
1 1/2 c. oat bran
1 cup oat flour
3/4 cup splenda
1 tbsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1/4 c. dried apricots
1/4 c. chopped walnuts

-Preheat oven to 425F Degrees. Spray muffin tin with nonstick cooking spray (PAM).

-In a small bowl, whisk together milkm crystal light, canola oil, strained spricots, and eggs. Set aside.

-In a large bowl, combine remaining dry ingredients and stir. Add apricots and walnuts and stir. Make a well adn add liquid mixture. Using a large spoon or spatula, stir just util dry ingredients are covered. Let set for 3-4 minutes, until thick.

-Spoon Batter into prepared muffin tins.

-Bake for 16-18 minutes or until center springs back when lightly touched. Cool, remove and let sit.
