INGREDIENTS:
2 cups oatmeal
3 tbsp natural almond butter
2 tbsp natural peanut butter
1/2 cup water
5 egg whites
5 scoops protein powder (flavor of your choice)
Directions:
Preheat the oven to 350 degrees F. Line a 13×9-inch baking pan with parchment paper or spray with no-stick cooking spray; set aside.
As soon as the oven is preheated, spread the rolled oats evenly onto a large, rimmed baking sheet. Bake for about 10 minutes, stirring occasionally, or until lightly toasted. Remove pan from the oven; set aside.
Meanwhile, in a medium, microwave-safe mixing bowl, combine the nut butters, then microwave on High for 20 seconds, or until soft.
Whisk in the water and egg whites until very smooth. Add the protein powder one scoop at a time, whisking until smooth after each addition.
Stir the rolled oats into the nut butter and protein powder mixture until well mixed. Spread the mixture evenly into the pan.
Bake for 20 to 30 minutes, or until the mixture is set and lightly browned. Remove pan from the oven and set on a wire rack to cool.
Cut into bars and store for perfect on the go meals! š
(makes about 10 bars)
Hey G, this looks great can I fit this recipe in? If so what is the serving size for me? Maybe Ican figure out how to make this a one meal wonder… I ‘ll work on that. This way it can be a meal for me! Is there a trick to soften the almond butter once its been open and put in the refrigerator?
Its so dern hard even if I microwave it… let me know please….
This one is great and super easy!! You can fit this recipe into your plan where you have a nut butter or healthy fat! Cut the bars into 8 and have 1 for a serving size of 1/4 c. oats or 2 bars for 1/2 c. oats. You can soften the nut butter by nuking it in the refrigerator, simple as that. Be sure there is no foil on the outer edges, that will case sparks! š You should be able to microwave it for a little bit longer or put the serving size on the stove top. Try adding a touch of water and hey, that also adds for a little bit more to your serving. Keep stirring it and it will soften up. I love to add a touch of water to just about everything, as that adds to the amount with out adding to the calories š Give that a try…
