4 oz chicken breast
2 tbsp almond meal (15 almonds crushed)
1-2 cloves minced fresh garlic or 1/2 tsp powdered garlic
1 tsp Italian seasoning
*fresh parsley a great addition too
*1 egg white
Preheat oven to 425. Place almond meal on plate and egg white in separate bowl Add seasonings to almond meal and set aside. Pound chicken to tenderize it. I like to place in ziplock or in plastic wrap to avoid mess. Coat in egg white then place in almond meal and flip back and forth to evenly distribute on both sides of chicken breast. Place in baking dish and in oven for 30-40 minutes until cooked all the way through.
Enjoy with salad or veggies.
