Morning Jicima Fritters
1/2 jicama, cut lengthwise and into cubes
2 tbsp coconut oil
4 packs stevia (adjust to liking)
1 tbsp lemon juice
2 tsp vanilla
2 tsp cinnamon
Peel the jicama, cut lengthwise into quarters and slice into cubes.
Heat the coconut oil on high heat in a medium skillet. When the oil has melted, stir in all the ingredients and cook on medium heat until the veggie is to desired consistency (the longer you cook it the softer it will be).
Place over your favorite protein pancake and enjoy a healthy Morning Fritter and makes for a delicious breakfast!!
