SPICY PUMPKIN SEEDS
* 2 egg whites
* 2 teaspoon smoked chipotle powder
* 3 tablespoons I can’t believe it’s not butter spray OR Smart Balance Butter
* 1 teaspoon sea salt
* 2 cup fresh pumpkin seeds
Preparation
Pre-heat the oven to 375˚F. Line a baking sheet with wax paper.
In a medium size bowl, whisk together egg whites, chipotle powder and salt. Add the pumpkin seeds and toss to coat well
Spread the seeds in a single layer across the baking sheet and bake for about 15 minutes. Stir them up a bit and place back into the oven until golden in color, about 5 minutes more.
CURRIED PUMPKIN SEEDS

* 1 teaspoon salt
* 2 cup fresh pumpkin seeds
