1 shallot
1/2 bulb fennel
1 cup extra-virgin olive oil
zest of 1 lemon and 1 lime
1 tbsp fresh pepper
1 tsp. curry powder
Handful fresh Italian parsley

-Cut the shallot and fennel in tiny dices (or process in a blender) and add all the other ingredients.

Enjoy on any fish!!! Or even Chicken!
