8 egg whites
1 pound ground 99%lean turkey or ground chicken breast
1 cup spinach
1 cup sliced zucchini
1 cup cubed celery
1 cup cubed egg plant
1 cup sliced green and red bell peppers
2 sliced tomatoes
1 clove garlic
pinch of salt (optional)
pepper
pinch of italian seasoning

Cook ground meat in a medium skillet until cooked through and lightly browned. Drain excess liquid from the pan and set aside cooked meat.

Scramble the egg whites until cooked to your desire and add to cooked meat.

In a large skillet, spray pam and saute all the veggies and garlic until cooked.

Add remainder of cooked ingredients to veggies and mix. Season with seasonings and serve.
