For the Turkey Balls:
1/4 lb 99% lean ground turkey
1/4 lb 93% lean ground turkey
1 egg white
1/2 cup quick oats
1/2 cup chopped cilantro
1 green onion, minced
1/4 sweet onion, minced
2 cloves garlic, minced
2 tbsp chili paste
Salt & pepper to taste
For the garlicky kale Salad:
2 cups kale, chopped and with stem removed
1/4 cup carrots, shredded
2 – 4 garlic cloves, minced
1 tablespoon olive oil
2 tbsp nutritional yeast or low fat parmesan cheese
Salt & pepper to taste
Preheat oven to 350.
Mix the all the ingredients for the turkey burgers in a large bowl. Shape into 2-4 balls and set aside.
Bake 15-20 minutes or until firm and lightly brown.
While the turkey balls are cooking, prepare the garlicky kale salad by placing all ingredients in a bowl and tossing generously until well coated with the olive oil.
When the turkey balls have finished cooking, remove them and let them rest for a few minutes.
Serve Kale Salad with Turkey Balls over top or on the side.
Optional: Serve with Walden Farms No Calorie Honey BBQ Sauce over top.
