    So you did 4 servings right? and that filled the pancake pan and muffin pan.. so just quadruple this recipe?

    Yes, this was 4 servings so I 4x the recipe…. I like to make more so I can freeze them and have them prepared. The recipe above is for one serving so yes quadruple this recipe for 4 servings!!! KEEP IN MIND, WITH THE QUINOA FLOUR, THE BATTER IS MUCH THICKER SO YOU MAY NEED TO ADD A TOUCH MORE WATER TO THIN IT OUT AND SPREAD THE BATTER OUT TO GET MORE MUFFINS…. TRIAL AND ERROR, DEPENDING ON HOW YOU LIKE YOUR MUFFINS/PANCAKES

    REMEMBER— THE MORE LEMON THE BETTER. DEFINITELY ZEST OF ONE LEMON FOR EACH SERVING, MAYBE EVEN MORE….

    I am a quinoa newbie here but willing to try new ingredients- I’m not kidding this recipe is fantastic !!!!I made this recipe into mini muffins with a little bit more lemon Woo hoo!!!

    Melb, glad you gave this one a try!! Glad you love it and are up to try new things. I am glad you added more lemon too! I know, the more lemon the better!! I am excited you have opened your doors to quinoa and now can add it to your everyday diet!! Remember you can make these with oatmeal or oat flour too! 🙂
