ingredients:
(per 1 serving)
1/4 c. quinoa
1 scoop protein powder
6 drops of Lemon Drop Sweet Leaf Stevia
Zest of One Lemon
2 egg whites
1 tsp baking soda
2 tbsp water
Directions:
-If baking muffins, preheat oven to 375 degrees F.
–mix all ingredients in a blender until completely mixed.
-pour into sprayed muffin tin or pour into pancake pan to cook on stove top.
-in oven, allow to cook for 12-18 minutes, until tooth pick comes out clean.

Yes, this was 4 servings so I 4x the recipe…. I like to make more so I can freeze them and have them prepared. The recipe above is for one serving so yes quadruple this recipe for 4 servings!!! KEEP IN MIND, WITH THE QUINOA FLOUR, THE BATTER IS MUCH THICKER SO YOU MAY NEED TO ADD A TOUCH MORE WATER TO THIN IT OUT AND SPREAD THE BATTER OUT TO GET MORE MUFFINS…. TRIAL AND ERROR, DEPENDING ON HOW YOU LIKE YOUR MUFFINS/PANCAKES

I am a quinoa newbie here but willing to try new ingredients- I’m not kidding this recipe is fantastic !!!!I made this recipe into mini muffins with a little bit more lemon Woo hoo!!!
