Kashi Asian Lettuce Cups

Ingredients
2 cups of Kashi 7 Whole Grain Pilaf
2 chicken breasts sliced in cubes
2 cloves of garlic, minced
⅓ cup finely diced carrots (optional)
1 cup finely diced celery
1 can water chestnuts, minced
2 green onions, finely sliced
5 mushrooms, diced
2 teaspoons low sodium soy sauce
4 teaspoons hoisin sauce
1 round-shaped head of lettuce such as iceberg to make lettuce cups
You can even use cabbage for firmer wraps!

Directions
Cook Kashi Pilaf according to package instructions.
To make lettuce cups, cut each leaf at the stem and carefully peel the leaf off.
Cook chicken and garlic to wok and stir-fry until chicken is no longer pink, about 3 to 4 minutes.
Add carrots and celery, stir-fry 1 minute.
Add hot cooked Kashi Pilaf to wok and stir-fry 1 minute.
Add water chestnuts, green onions, mushrooms, soy sauce, and hoisin sauce. Stir-fry 1 to 2 minutes until heated through.
fill lettuce cups with desired amount and ENJOY!!

OPTIONAL: ADD DICED ALMONDS OR CASHEWS FOR AN EXTRA NUTTY FLAVOR!!
