INGREDIENTS:
1 red bell pepper, chopped
1 cucumber, chopped
1/4 large purple onion, chopped
1 cup celery, chopped
1 roma tomato, chopped
1 cup black beans
1 cup lima beans
1 cup garbanzo beans
3 artichoke hearts (about 1/2 cup) chopped
5 cloves fresh garlic, finely minced
1/4 cup Olive Oil
1/2 cup apple cider vinegar (or vinegar of your choice)
2 oz Almond Mozzarella Cheese, diced
1 tbsp Italian seasoning
1/2 avocado, diced
DIRECTIONS:
-In large mixing bowl, add all ingredients except Avocado.
-Toss really well to coat all ingredients with EVOO and Vinegar.
-If serving right away, dish out serving and top off with diced avocado.
-If storing for later use, place in Tupperware, top off with diced avocado and chill until served.
