1/2 pound Smart Balance Light Butter
3/4 cup Firmly Packed Splenda Brown Sugar
1/4 c. regular brown sugar
1/2 c. Splenda Baking Sugar
4 egg whites
1 teaspoon Vanilla or Almond Extract
1 1/2 cups Oat flour (either buy it ground or pre grind your own dry quick oatmeal)
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 tsp salt (optional)
3 cups whole oatmeal (not ground)
1 cup carob chips, raisins, craisins, or cranberries OR for the Holidays cut peppermint patty into small pieces and add that for a holiday flavor!

-heat oven to 350F
-beat sugar and butters
-add egg whites and extract, beat
-combine oat flour, baking soda, cinnamon and salt, mix
-stir in oats and addional ingred of choice (carob chips, raisis, craisins, cranberries, or peppermint pattie chunks)
-drop round tbsps onto cookie sheet greased with pam
-bake 10-12 minutes or until golden brown
-cool and remove
