Healthy Chocolate Cake
1 ½ cups oat flour
4 tbsp cocoa powder
1 cup sugar substitute (baking splenda)
1 tsp baking powder
1 tsp baking soda
½ tsp salt
½ cup apple sauce
1 tbsp vinegar
1 tsp vanilla essence
1 cup warm water
Grease and base-line a 20cm round, loose-based cake tin. Heat the oven to 350F/180C/gas 4.
Sift together the flour, cocoa powder, baking powder, baking soda and salt. Stir in the
sugar.
In a separate bowl, mix together apple sauce, vinegar, vanilla essence and water.
Mix these into the dry ingredients until just blended. Do not over mix.
Pour into the tin and bake for 30-35 minutes until risen and springs back when pressed.
Serve the cake just as it is or top it off with
Homemade frosting
-1 container of non fat cool whip and 1 packet of sugar free pudding mix
–mix together and spread over top!
