INGREDIENTS:
1/4 cup raw almonds
1/4 cup pumpkin seeds
1/4 cup dried goji berries or cranberries
1/4 cup chopped walnuts
3 cups low fat organic popcorn
1 oz carob chips or dark chocolate pieces
1 tsp sea salt or cinnamon/stevia–for sweeter mix)
2 oz unsweetened coconut flakes
1 tbsp coconut oil
DIRECTIONS:
Pan fry pumpkin seeds in coconut oil with touch of sea salt or cinnamon/Stevia mix if you prefer a sweeter Trail Mix. Allow to cook for about 5 minutes, slightly toasting and coating seeds with oil and salt (or cinnamon/stevia). Set aside and allow to cool. Place all other ingredients into a large bowl and add pumpkin seeds to the mixture. Gently toss well and enjoy as a healthy Halloween snack! Enjoy!!
