1/2 grapefruit, cut in bite size pieces
1 scoop vanilla protein powder
1/4 -1/2 c. oats
2-4 tbsp water, depending on consistency with oats
1 tsp vanilla extract
2 packets sweetener
1 tsp baking powder
1 tsp cinnamon
mix all ingredients, except grapefruit, in mixer or with fork, until smooth and no clumps are visible. Fold in bit size grapefruit pieces. Spray loaf pan or if you are making as a pancake, spray skillet. If you are baking, pre heat oven to 375. Pour in loaf pan or on skillet and bake or cook on stove top until cooked all the way through. If baking, cook about 15 minutes, until brown on top. If you are making a pancake, flip so cooked evenly on both sides. Enjoy with a nut butter or by itself! Perfect post workout meal! 🙂
