3 cups whole grain flour
1 tbsp baking soda
3 1/2 cups carrot pulp
1 cup pineapple pulp
1 cup natural honey
2 tbsp cinnamon
1 tsp nutmeg
6 egg whites
1 tbsp vanilla
1 cup canola or flax oil
1 1/2 c. crushed walnuts
2 tbsp splenda
preheat oven to 350 degrees F. Grease muffin pans. Mix pulp well. Add egg whites, anilla, honey, and oil. Bend into pulp mixture. Mix in Nuts. Fill muffin pan, sprinkle splenda on top of muffins and bake for 45 minutes.
