Ingredients

βœ” 3/4 C almond meal/flour
βœ”1/4 C coconut flour
βœ”2 scoops Vanilla protein powder
βœ”1 Tsp baking powder
βœ”1/2 Tsp sea salt
βœ”1/3 C coconut oil
βœ”1 whole eggs
βœ”4 egg whites
βœ”1/2 cup unsweetened coconut or almond milk
βœ”1/2 lemon, freshly squeezed
βœ”zest of 1 lemon
βœ”1 TBSP poppy seeds
βœ”4 packets Stevia or Splenda 



Yields: 12 muffins 1 muffin = Lean Protein + 1 Fat Serving

Directions

Preheat oven to 350 degrees.
Add almond flour/meal, coconut flour, protein powder, sea salt and baking powder in a large mixing bowl and stir with a whisk or hand mixer to combine.
Add oil and egg/whites in the bowl with dry ingredients and mix until fully combined.
Add coconut milk, lemon zest, poppy seeds and stevia. Continue to mix until well combined.
Pour batter into muffin liners in a muffin pan and bake for approximately 20 minutes.
Remove from the oven and allow to cool.
Enjoy!
