Gluten Free Lemon Poppyseed Muffins
Ingredients
✔ 3/4 C almond meal/flour
✔1/4 C coconut flour
✔2 scoops Vanilla protein powder
✔1 Tsp baking powder
✔1/2 Tsp sea salt
✔1/3 C coconut oil
✔1 whole eggs
✔4 egg whites
✔1/2 cup unsweetened coconut or almond milk
✔1/2 lemon, freshly squeezed
✔zest of 1 lemon
✔1 TBSP poppy seeds
✔4 packets Stevia or Splenda
Yields: 12 muffins 1 muffin = Lean Protein + 1 Fat Serving

Directions
Preheat oven to 350 degrees.
Add almond flour/meal, coconut flour, protein powder, sea salt and baking powder in a large mixing bowl and stir with a whisk or hand mixer to combine.
Add oil and egg/whites in the bowl with dry ingredients and mix until fully combined.
Add coconut milk, lemon zest, poppy seeds and stevia. Continue to mix until well combined.
Pour batter into muffin liners in a muffin pan and bake for approximately 20 minutes.
Remove from the oven and allow to cool.
