Lemon Poppy Seed Muffins

Ingredients:

-1 cup almond meal/flour
-1/4 cup coconut flour
-2 scoops Devotion Nutrition Angel Food Cake
-1 tsp baking powder
-1/2 tsp sea salt
-1/3 cup coconut oil
-2 whole eggs
-3 egg whites
-1/2 cup unsweetened coconut milk
-1/2 lemon, freshly squeezed
-zest of 1 lemon
-1 tbsp poppy seeds
-4 Lemon Meringue Flex Flavors

Instructions:

Preheat oven to 350 degrees Fahrenheit.
Add almond flour/meal, coconut flour, protein powder, sea salt and baking powder in a large mixing bowl and stir with a whisk or hand mixer to combine.
Add oil and eggs/whites in the bowl with dry ingredients and mix until fully combined.
Add coconut milk, lemon meringue Flex Flavors, lemon zest, and poppy seeds. Continue to mix until well combined.
Pour batter into muffin liners in a muffin pan and bake for approximately 20 minutes.
Remove from the oven and allow to cool.
