2 cups oat flour
1/2 tsp baking soda
2 tsp cinnamon
1/4 tsp salt
1 tsp baking powder
1/2 cup splenda granular
3 tsp vanilla extract
4 egg whites
1 scoop vanilla protein powder
1/2 cup flax oil
1 1/2 cups yellow/green squash/zucchini (grated)
1 cup minced walnuts

preheat oven to 350 degrees F. Grease loaf pan. Add all dry ingredients and slowly add in oil and blend well. Slowly add in egg whites and vanilla extract and continue to beat mixture. Gently blend until well mixed and fill loaf pan. Add a touch of splenda to top of loaf and bake for approximately 1 hour or until golden brown. Enjoy!!
