2 dozen eggs
1/2 onion, finely diced
3 stocks of celery, finely diced
1 tbsp tobasco
1 yellow cauliflower head
3 tbsp I can’t believe it’s not butter or Butter of your choice (Smart Balance)
3 tbsp Parmesan Cheese (optional)
1/2 c. non fat sour cream
1 tbsp garlic salt
garlic powder, to taste
pepper, to taste
1 tsp paprika
Boil eggs until hard boiled… Remove from Pan and immediately place in ice water to allow shells to come off eggs easily. Once cooled, remove shells, cut eggs in 1/2, remove and dispose egg yokes and set aside.
Boil cauliflower until when punctured with a fork, the cauliflower is extremely soft. Once soft, drain from water and add to Food Processor. Mix until pieces are broken up.
Add seasonings, butter, sour cream, Tabasco, Cheese ( if you are using it), continue to mix until very creamy. Add in minced celery and onions and continue to mix well. Once all ingredients are mixed, remove from mixer and set aside.
Use spoon to spoon in mixture into empty eggs. Fill to brim and continue filling eggs until all are filled. You may have tons of left over filling but you can use it in other recipes (on a salad or in a wrap).
Last step, sprinkle Paprika Seasoning over top and serve! 😉
