-1 large can diced tomatoes, with the juice
-1 cup fresh tomatoes
-6 Persian cucumbers
-1 bunch cilantro
-1 roasted red bell pepper
-1 cup low sodium V8 or tomato juice
-1 teaspoon salt
-1 teaspoon pepper
-1 lemon, juice
-1 small jalapeño (optional and for an extra kick)
*hot sauce optional
Place all ingredients in food processor and blend leaving some texture….
Refrigerate and serve cold.
Great Served over any lean protein or even all by itself! 🙂
