Garlic Veggie Saute

Ingredients:

  • 2  cups Brussels sprouts, cut in half
  • 2  cups yellow squash
  • 2 cups or zucchini, cut into slices
  • 1 large egg plant, cubed
  • 1 large tomato , diced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp  minced garlic

Preparation:

1. Put Brussels sprouts, squash (s), eggplant, and a couple tablespoons of water in a microwave-safe dish and microwave on HIGH until vegetables are lightly cooked. Drain well.
2. Add oil and garlic to large nonstick frying pan or skillet and heat over medium heat for 1-2 minutes. Stir in the Brussels sprouts, squash, eggplant and tomato. Sauté for a few minutes, or until vegetables start to brown. Serve.
