INGREDIENTS:
-Julian Bread
-1/4 c. peanut flour
-water
-4 egg whites
-1/2 apple, chopped
-cinnamon
-sweetener of choice (stevia is preferred)
DIRECTIONS:
-Place Julian Bread in toaster while preparing rest of meal.
-Mix peanut flour with water, adding water slowly until desired consistency. Set aside
-In saute pan, add chopped apples, cinnamon and stevia and saute until browned. Set aside.
-Crack egg whites and add a touch of cinnamon and stevia.
-Place in saute pan and cook, like a pancake, on medium until fully cooked on one side. Flip and cook on other side.
-Add sauteed apples and fold egg whites like a burrito, allowing to cook for another 30 seconds on both sides.
-Remove from pan and add to plate.
-Add Julian bread to plate and top off with homemade Peanut Butter.
