Erin's Moist No Carb Meatloaf
1/2 small purple onion (or any color, that’s just what I had on hand)
1 small zucchini
3 cloves garlic, pressed
1 egg OR 1 egg white
4 oz 99% lean ground turkey OR 1/2 99% lean & 1/2 93% lean
1/4 cup tomato sauce
2 t Worcestershire sauce
Salt and pepper
Optional: 1/2 cup tomato sauce
Grate zucchini and onion in food processor. (You can skip this step but it just assures all the veggies are uniformly teeny.) Remove grating disk and put in S blade. Mince onion and zucchini very finely in processor or blender. Place in bowl with remainder of ingredients and mix by hand till fully incorporated. Place in loaf pan sprayed with cooking spray. Spread 1/2 cup tomato sauce on top if desired.
Bake at 350 degrees for 50-55 minutes or until internal temperature is 165. Remove from oven and let stand at least 5 minutes.
