Argentinian Sauce usually served on steak.
Chimichurri Sauce
1 cup firmly packed fresh flat-leaf parsley
3-4 garlic cloves
2 Tbsps fresh oregano leaves (can substitute 2 teaspoons dried oregano)
1/2 cup olive oil
2 Tbsp red wine vinegar
1/4 teaspoon freshly ground black pepper
2 teaspoons red pepper flakes (or adjust according to taste)
Chop parsley, garlic, oregano finely. Add olive oil, vinegar, pepper and red pepper flakes. Can also be put in the food processor or blender all but olive oil and then add that after. Let it sit for a while to let the flavors mingle.
-add a few spoonfuls to a nice juicy steak or to your favorite veggie soup and top off with Parmesan cheese. Enjoy!!
