INGREDIENTS:
1 red bell pepper
1 zucchini
6 mushrooms
fresh parsley
fresh oregano
1 head of cauliflower
garlic powder
onion powder
Kroger’s Zesty Herb Blend
sea salt
pepper
DIRECTIONS:
Chop all veggies except cauliflower by hand or (as I did) in the food processor. Process cauliflower in food processor with grater blade so it looks like rice. Heat pan and spray with cooking spray. Add all veggies, herbs, and seasonings except cauliflower. Stir briefly. Add cauliflower and salt and pepper to taste. Cook just until cauliflower is soft. Delish and carb free!!! Next time I would actually double up on the pepper, zucchini and mushrooms.
served it with toasted seaweed sheets that had been brushed with sesame oil and sprinkled with just a wee bit of sea salt. Really tasty!!!
