1 cup low sodium chicken broth
1/2 cup water
1/4 package kelp noodles
4 egg whites
1 green onion, thinly sliced
Bring broth and water to a boil. Add kelp noodles and keep on low rolling boil for about 5-10 minutes, till noodles soften. Beat egg whites together. Add green onions to soup. Slowly pour in egg whites, whisking the entire time. Pour into bowl and enjoy! Simple and delicious! You can always add whatever other seasonings you want to the broth.
