INGREDIENTS:
-1 small onion, diced
-1/3 cup Salsa
-1 lbs. raw 99% lean ground turkey (or you can do 1/2 lean and 1/2 extra lean)
-3 cups bagged dry broccoli cole slaw
-3 egg whites
-1 cup quick-cooking oats
Directions:
Preheat oven to 350 degrees.
Add all ingredients in a bowl and thoroughly mix.
Line  a cup muffin pan with baking cups and/or spray with nonstick spray. Evenly distribute turkey-veggie mixture among the muffin cups.
Bake in the oven for 30 – 35 minutes, until firm with lightly browned edges. Let stand for 5 minutes before serving. Enjoy!!!!
