-6 cucumbers
-1 red onion
-2 Roma tomatoes
-dash of sea salt
-pepper, to taste
-1/4 cup red wine vinegar
-1/4 cup olive oil
Peel cucumbers and run fork down outside to “grade” and create rivets on outside of cucumber for decoration. Slice cucumbers, onions and tomatoes into bite size pieces and place in large mixing bowl.
Add remaining ingredients and toss generously. Allow to sit in refrigerator for a few hours before serving to allow cucumbers to marinate in juices. Serve and enjoy!
