-1 cucumber
-1 red bell pepper
-1 roma tomato
-1/4 onion
-4-6 stalks of celery
-1-2 TBSP dijon mustard
-pepper to taste
-1 clove garlic minced (or 1-2 frozen Dorots)


Chop all veggies (cucumber, celery, tomato, bell pepper, and onion) and place them in a large bowl. Add vinegar and pepper. Toss well and set aside.

Prepare dijon mixture by adding garlic, dijon and touch of pepper. Mix well then add tuna. Mix until dijon and tuna are well combined then add over top veggie mix and enjoy.

This is a lean protein + veggie meal. If carbs or fats are listed in your meal plan, simply add your serving of carbs or fats & enjoy!

olive oil, pumpkin seeds, almonds, avocado or pork rinds
