Coconut Lime Shrimp
Ingredients:
16 oz shrimp, tail off (precooked or raw)
3 tbsp coconut oil
2 tbsp garlic, minced
2 tbsp basil, shopped
1 packet stevia
1 tsp pepper
juice of 3 limes
zest of 3 limes
1 large zucchini, chopped
1 red bell pepper, chopped
1 yellow bell pepper, copped
1 orange bell pepper, chopped
1 oz unsweetened shredded coconut flakes
Directions:
Place 2 tbsp coconut oil, shrimp, garlic, basil, stevia, pepper lime juice and zest in a crock-pot and cook on low for 3-4 hours. Set aside and prepare remainder of dish. In a sauté pan, sauté 1 tbsp coconut oil with zucchini and bell peppers until soft and golden brown. Add shrimp mixture and allow to sauté for 12-15 minutes, stirring occasionally. Serve and top off with shredded coconut and enjoy!
