INGREDIENTS:
- -3 firm bananas
- -1/3 cup nut butter
- -1/3 cup >70% dark chocolate
- -1-2 cups grated unsweetened coconut
- -1 tsp coconut oil
DIRECTIONS:
- -Line pan with parchment paper
- -Cut bananas into 1 inch sections, about 8 per banana.
- -Place grated coconut on plate and set aside.
- -Melt coconut oil, nut butter and chocolate over stovetop on medium-low heat.
- -Individually, dip bananas in melted nut butter chocolate mixture and roll in grated coconut.
- -Place on wax paper and freeze for 2-4 hours.
- -If frozen solid, remove from freezer for a few minutes before serving.
- Serving size: approximately 24 bites out of 3 bananas
