Ingredients:
6 large Carrots, diced.
3 large sweet potatoes, diced – I would replace them with cauliflowers next time
2 can Tuna.
1 can Peas
Grated Cheese (OPTIONAL!)
Preparation Instructions:
1. Cook the diced carrots and sweet potatoes (or cauliflower) in boiling water until soft.
2. Drain and mash. Mix in the tuna and peas.
3. Pour into a dish.
4. Cover with cheese (if your diet allows it!)
5. Bake in an oven at 400F for 20 to 30 minutes or until cheese is golden (if you put cheese)
