Chippity Chippers
Yield:3 dozen
2 3/4 cups oat flour
1 teaspoon baking soda
1 cup unsalted butter, softened
1/2 cup light brown sugar, firmly packed
1/2 cup granulated splenda sugar
1 tablespoon sugar free syrup
1 large egg
2 large egg whties
2 teaspoons pure vanilla extract
1 cup (6 ounces) semisweet chocolate chips
1 cup (6 ounces) milk chocolate chips
1 cup (6 ounces) white chocolate chips
1/2 cup (3 ounces) peanut butter chips
Preheat oven to 325 degrees F.
In a medium bowl, whisk together the four, baking soda and salt.
In a medium bowl, cream the butter, sugars and honey. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Stir in the flour mixture and all of the chips. Stir just until blended; do not overmix.
Drop the dough by rounded tablespoon 2 inches apart on an ungreased cookie sheet. Bake for 18 to 20 minutes. Transfer to wire racks to cool.
