-4 oz chicken breast
-1/2 c. sliced mushrooms
-2 tbsps olive oil
-2 cloves garlic, minced
-1 tsp basil
-2 tbsp pepper
-1/2 c. cottage cheese (non fat) or Voskos Greek Yogurt
-1 small onion
-1/2 c. celery, diced
-Prepare chicken however you prefer to cook. (bake, broil, grill)
-pan fry garlic, 1 tbsp olive oil, onion, basil, 1 tbsp pepper, and onion until fully cooked.
-In blender mix cottage cheese (or yogurt), 1 tbsp olive oil and pepper
– Serve chicken with mushroom saute over top and pour cottage cheese over top.
