INGREDIENTS:
-4 oz chicken, cooked and cubed
-1/4 c. celery
-1/4 c. mushrooms
-1 medium tomato
-4 cups raw spinach
-1/2 purple onion
-2 bell peppers, topped and cleaned out (any color you wish)
-1 tbsp fresh minced garlic
-1 tsp. ginger (powder or fresh)
-1 lime
DIRECTIONS:
-Cut off tops of bell peppers and clean out insides, set aside.
-Saute celery, mushrooms, tomato, spinach, onion and tops of bell pepper in pan.
-Allow to saute until cooked.
-If too much moisture, strain spinach saute until excess moisture is fully drained.
-Dry pan and re spray with Pam. Add spinach saute back into pan.
-Add ginger, lime and garlic and continue cooking until brown.
-Add chicken and mix well.
-Stuff bell peppers with spinach saute and Enjoy! 🙂
