Ingredients:

6 tbsp. olive oil
4 tsp. Stevia
24 oz. raw boneless skinless lean chicken breast, cubed (about 6 breasts)
1 cup sliced mushroom
1 cup sliced bell pepper
1 cup chopped celery
1 cup chopped red onion
3 tbsp minced garlic
1 cup sliced zucchini
2 large tomatoes, sliced OR you can use a can of stewed tomatoes
1 tsp pepper
1 tbsp Italian seasoning

Directions:
Slice and Dice all veggies that need cutting, Combine all ingredents in a crock pot. Allow to slow cook all day (approx 8-10 hours). The longer the better. Once cooked allow to sit and cool. Set aside your serving and place the remainder in tupperware for future meals! Delicious!
