INGREDIENTS:
-1 large head cauliflower (core removed and cut into same-size flowerets)
-4 cloves garlic, minced
-2-3 anchovy filets from a can, minced
-tiny pinch red pepper flakes
-2 Tbsp olive oil
-1/3 cup chopped fresh parsley
DIRECTIONS:
-Cut the cauliflower in half, cut out the core part, and either boil, steam or microwave until completely soft to touch of fork.
-Allow cauliflower to cool enough to handle and cut into tiny flowerets.
-Ensure parsley, garlic, and anchovies are minced well.
-Heat olive oil in large, heavy frying pan. (A pan that’s not non-stick will give the best browning.)
-Add the garlic/anchovy mixture and saute over medium heat until begins to brown.
-Add red pepper flakes and parsley and continue sauteing about 30 seconds more.
-Add cauliflower pieces, raise the heat a little, and cook until the cauliflower has browned well.
